a highly appreciated honey thanks to its fine aroma and its peculiarity to stay liquid much longer than other honeys. It is also an excellent sweetener because it’s very rich in fructose.
Robinia Pseudoacacia L. – Family of Leguminosae
Produced only in Montefeltro (an area in the Italian province of Pesaro – Urbino).
Long-time liquid lasting, it becomes cloudy when it starts crystallizing, but it never takes a total crystalline texture. The colour may change from almost clear to straw yellow.
The intensity of its scent is weak, it sometimes reminds of acacia flowers or of a baked pear.
This is a very sweet honey, sometimes even nauseating. Barely aromatic. Its flavour reminds of sugared almonds, vanilla and caster sugar. Scarcely persistent in the mouth.
Acacia honey is particularly recommended for children, especially in case of inflammations in the breathing system or in gastrointestinal mucosa. It helps detoxify the liver.
Honey availability is not assured every year and/or all the year round due to the natural variability of its production. Beware of those who offer honey every year for twelve months. We are not an industry, we are farmers and we are tightly connected to Mother Nature and its seasons.
